My config was:
MB= ASUS P5Q-E BIOS 2101, Win7 X64 RTM

HD0 - WDC Raptor (Boot drive Win7 X64 RTM( System and programs)
HD1&2 - Seagate Cuda's in a RAID 0 Setup (Data Multimedia and Games)
The Storage Configuration in BIOS was Set to RAID .

I backed up all the data on the RAID devices, Deleted the RAID using the BIOS RAID setup.
I rebooted and repartitioned the now separate cuda's and restored my data . I also uninstalled the intel matrix storage manager drivers that were needed for RAID. All was well.

When I boot, the BIOS screen shows the RAID BIOS initialization and all three drives are listed as NON-RAID Configuration.

The problem is:
If I attempt to change the storage configuration in the BIOS from RAID to AHCI, the system blue screens during the boot process.

It boots fine if I leave the storage configuration option as RAID, but I would like to stop the RAID bios from loading and to do this I need to set the storage configuration option to AHCI.

Is there any way to correct this problem without reinstalling Windows?

Maybe, but Windows really doesn't like it when you move its boot volume around. Startup repair might fix it.

As a general rule you can't change controller modes without reinstalling.
No longer a case with Vista and 7.

OP, try changing the configuration for the 2 ex-raid drives to IDE mode. Then when your in Windows, install the AHCI driver again and reboot, then switch to AHCI.

Turns out there is a way to do this. I found these instructions and they work.

1. Exit all Windows-based programs.
2. Click Start, type regedit in the Start Search box, and then press ENTER.
3. If you receive the User Account Control dialog box, click Continue.
4. Locate and then click the following registry subkey:
HKEY_LOCAL_MACHINE\System\CurrentControlSet\Services\Msahci
5. In the right pane, right-click Start in the Name column, and then click Modify.
6. In the Value data box, type 0, and then click OK.
7. On the File menu, click Exit to close Registry Editor.
8. Reboot, enter the BIOS and chage the storage configuration to AHCI
