Is it ok to use and SSD and back it up to a SATA drive in lab server, considering they are totally different speeds?

It will work but depending on your raid implementation the SSD in raid1 may perform like a hard drive. I expect you to have hard drive latency for writes and possibly hard drive latency for reads depending if the raid is smart enough to pick the fastest drive or if it alternates between the two.

Also no raid level is a backup so your will still need a proper backup.

Repeat after me: RAID is *NOT* a backup.
Not only will you be hobbled by the spinning HDD but a single event could still take out both. (PSU goes and spikes everything? bye bye data)

If you want to keep a backup then run the HDD external and keep it disconnected when not in use backing stuff up.
