RAID 0 SSDs for New Build

I am planning to put together a new build with two SSDs in RAID 0 for my OS, main programs, and Steam drive. I am hoping to be able to use for 2-3 years without running out of space, so I am aiming for capacities of 240+ GBs per SSD. My budget is around $400-500 in 3-4 months. Steam will be able to take up all but about 125 GB of the total capacity. I usually have anywhere from 10-20 games currently downloaded on Steam to play at any time.

My question is this: Coming from a 128 GB M4, will there be a noticeable improvement in performance if I invest in higher quality smaller drives (like the 256 GB 840 Pro) at smaller capacities or is it going to make the most sense to get some bigger but slightly slower drives like the Corsair Force series at 360 GB?

My main concern is that with some games like the Witcher 2 already downloading at 25+ GBs, am I going to regret not having more capacity when the next gen of consoles come out.

Obviously not something anyone can know, but looking for thoughts/perspectives.
 
I am currently running a Raid 0 Vertex 3's 240GB after all drivers and stuff have roughly 424GB and only using about 25% of the drive right now. I saw a major increase in sustained read/write speeds and a small boost in the 4k-64k performance. Of course you increase the risk of a drive failure since it is raid 0 (that's what disk imaging is for) and unless you have a z77 MB you will not have Trim support.

Usually, if you are not going to be playing the game I wouldn't recommend having it installed especially when using a SSD as the drives are smaller. :) Secondly right now the way SSDs go on sale more likely to find a 240 or 256GB on sale for price per GB compared to a larger drive.
