I was looking to buy like a 5 ft rack mount but I know nothing about them. I saw antec has some cases i might buy one, like a 3 or 4U i am asuming the "U" stands for the amount it takes up vertically? no? Also what else would I need to run 3-4 headless computers over my network. I already have a rackmount ready switch, is there any brands i should look/look out for? 5ft is the max height and tell me anything else you know, thanks.

Well, for a rackmount server case, you won't want to use a relay rack. You definately need a 4 post rack, preferably a cabinet for good airflow and cool looks 
Most racks are about 6 feet tall, but you can get shorter ones. Expect to pay no less than $150 for a 4 post rack. Relay / Telco / 2 post racks can be had for less than $100.

The advice I've most often seen (and I'll repeat it here) is that rackmount is not worth it unless you are absolutely starved on space. Most people have room to stick 3 or 4 normal cases somewhere out of sight, and it'll save you a whole bundle of money.
As far as remote management, WinXP Pro has a Remote Desktop feature, and all brands of Linux offer it as well, although some applications are better at it than others. Cygwin is very commonly used on both platforms, but it's not free IIRC (I've only used it when it was given to me by school or work).
