Have been looking for an eight expansion slot server case. U4 or U5 is ok.
Has anyone ever seen one?

If you are thinking ATX board with ATX PSU and 8 expansion slots in a 4/5u rackmount case?
Then you are out of luck because they dont exist.

I think I looked at all 12billion pages of the internet and didnt find one.
There is a company, protocase, and they will make a custom rackmount but if dont do the CAD work yourself it gets up there in price.

If you decided you wanted to do that, I would go in with you to split the cost of design.
Its just too expensive to do for a single case.
 
Yes I remember reading an article about a case that held like 43 terabybes that an online backup company had custom made. They linked to the company that made the case for them. I'm at work so I'll see if I can find the company.
