So I'm looking to buy either a 5870 and watercool it.

Can I Eyefinity three monitors with one single 5870? If so, can I expect decent FPS in games?
What OC speeds can I expect with a damn fine WC setup? (1 Loop with CPU and VGA; Triple Rad + Dual Rad)
When can I expect prices to come down? Or should I just jump on a $380 5870 now?
Is there any specific model 5870 that overclocks really well?
 
Yes you can run eyefinity on a single ATI 5000 series card.

I'd wait at least until next week, there's a rumored announce coming out. I just heard this from Ryan Shrout from PC Perspective on a Twit live stream.

As for the rest of your questions I don't do water cooling so I have no idea.
