Which 4U case do you recommend that has excellent cooling for say 3-5 video cards and for gaming rigs?

Most of the ones I've been able to find seem to use the smaller 80mm fans instead of the 120mm fans and only have 2-3 fans for the most part.

Look at the Rosewill Blackhawk. Too much room, too many fans, top loading 2.5" external SSD bay, too many expansion slots, too large of inlet vent, vents on all sides, 2 powersupply mounting locations, etc.
 
The only Rosewill Blackhawks I can find are Full Tower cases and not 4U cases. Anyone got a link? I could be missing the ability to mount it in a rack without using a shelf.
 
I built four KGPE-D16 systems in these 4U cases recently and was happy with them.
Although these systems did not have any add on cards installed, there were plenty of fans and they were quiet. 2x120mm in front of HDD, 3x120mm middle and 2x80 rear exhaust.
If I had been building them for myself, I would have swapped out the fans for some GT1850's, but the stock ones moved air.

The main problem with ATX in 4U is fitting a 120mm fan over the i/o aperture. I had to use short standoffs, cut the floor so the expansion card tabs poke through, and modify an AP15 to fit...everything touches.

Be aware that your heatsink size limitation is about 92mm with this case. A 120mm will not fit due to a center reinforcement bar.
Also, the HDD cages are a PITA to work with. Figure out what you want where and put it there to stay.
