What kind/how many rads would I be looking at to cool an i7 and dual GTX275s or 285s? would 4x120 be enough if they were fesers? I plan do do full WC blocks for the GPUs.
 
4x120 should be enough. that said, if you want more air cooling you get a bigger hsf, if you want more water cooling you get more radiator area! you should be ok with 120.4, 120.5 would be even better if you can fit it. it just means lower temps and more overclockability. if its not in the budget or cant fit in your case, you should be fine with 120.4.
 
A quad should be fine for that setup. I'm running 3 285's on one triple radiator and temps are good. Even with the CPU in the loop, you should not have an issue - may want to keep the option of running your fans at higher speeds in case you do any serious Over Clocking.
 
Oooor you can try out that new Xpressar Refrigeration system :p

Read it wasn't built for serious OCing... So I don't know how well it'll hold the temps. Plus at that price, I might as well buy a Vapochill or something.
 
The cpu should be fine with one rad. I would go with a triple or quad rad for the cards. Those are the main heaters.
