Hey, how much better is the performance on SLI? is it like 100% more performance?

and should I buy 2 mid ranges cards over 1 high end card, such as 2x260's and 1x275/280

No, it's performance isn't 100%. Neither is CF.
Multi-gpu setups allow running a higher resolution with higher levels of eyecandy than a single gpu is capable of.

The performance increase is theoretically 100% but in practice it's usually between 50-75%, and only for games that support it. You're better off buying a single faster card. In my opinion SLI and Crossfire only make sense if you buy two of the highest-end cards, at the same time, and immediately after launch. Anything else doesn't make sense.
 
SLI doesn't have linear scalability, so by adding a second vid card you won't get twice the performance, you would get twice the power usage though :D

SLI performance also depends in the coding of the games and applications that use it
 
Ok thanks for the answers, I only have a 750W psu so I think I'll go with a single card.

(Hint: It's nowhere near 750watts)

I do thinka single faster card is better than two slower ones, but just an FYI, 750 is plenty.
 
I would recommend that you buy the single best card that you can afford, then down the line when you sli you can match it for greater gains.

If you just bought two mid range cards for sli, then you have limited your future proofness!

I currently am running two 8800ultras and if I was not a resolution whore pushing 4960x1600 they would still hold up for me, but I am a resolution whore and I will tell you to go one for now and then two for when you become a fellow resolution whore.

yeah, you just need a good quality PSU. SLI scales pretty well, usually around 80% extra
 
1000w woukld power 3 gtx285s, 2 gtx295s, 3 hd4870s, 2 hd4870x2's etc.

also, the fastest single card is the hd5870. the gtx295/hd4870x2 are both single cards with dual gpus which means they run on sli/xf
