I have two 500 gig drives in Raid 0 as my win boot drive.

I want to get one single SSD and reinstall win 7 and make that my boot drive.

But I want to leave my Raid 0 set up but not bootable. Want to use it as a simple storage drive.

Any issues with that?

Nope. Just Set the BIOS to boot off the SSD instead of the raid array.

+1 Its that simple.

Well set it to boot off the DVD drive to install Windows first, THEN set the SSD as second and then just disable any the 3rd boot device (or in the Hard Drive list, disable all but the SSD).

I'd recommend unhooking the hard drives while you do the install on the SSD, sometimes Windows will do screwy things if you have a Windows partition connected when you try to install to a different drive.

Definitely.
But if it's on the same controller and you want TRIM, you may have to enable AHCI mode instead of RAID mode for the controller. In that case you lose your RAID functionality.
