I've got an ASUS A8N32-SLI Deluxe mobo that supports dual PCI Express x16. Will newer 2.0 cards still work with it?

yes it will work just fine. currently i am running an ati 4870 1GB on a pci express x16 slot and i dont think the bandwidth is holding my card back.

Pci-E 1.1 16x = Pci-E 2.0 at 8x, which is more than 99% of single and multiple card configurations need. Even quad sli and crossfireX only show a 5-8% loss at the highest resolutions.

Same here, I have a 4890 in a x16 1.0 slot and it is running great. Benchmarks are very similar to what you would see in a hardocp review.

theres just no real games that push cards to require pci-e x16 2.0.. hell even gpu folding doesnt push the bandwidth to require pci-e x16 2.0 or even pci-e x16 at all..
