question about multiple displays

i have some questions about using a dual monitor setup and a quad monitor setup.
dual monitor setup.
1. When i am gaming will i be gaming on both screens? Will it show the picture on both or will i only be gaming on and the other one will show my desktop.
quad monitor setup.
1. ^ kinda same thing as that one. Will i be gaming on all four monitors?
2. Could i get 4 monitor arms and put like the Vx2025's on them and put them like a square. Like could put two ontop of each other and the other two right next to each other ontop of each other? (not really ontop of each other because if i do it i will be having arms holding them)

By default as far as I know it will only show your game on one screen.

Hardware like the Dual/TripleHead2Go lets you spread your desktop on three monitors (i.e. three monitors appears as one, so you get to play you game on three monitors at once). [1] [2]

There are most likely other ways to span your gaming on multiple screen, I don't personally know them though.
