PSU Question Single rail v multiple

I've seen plenty ofo PSUs out there(too damn many too choose from!) i noticed ALOT of them have very different AMPs on the rails.. also a few have single rails so whats the best bet for a PSU? Currently i just sold my PC power and cooling 610w(49AMP single rail) and getting a Coolermaster UCP 700w with 4x19AMP Rails so which was is better should i have stuck with the PC power? also for multiple rails do more amps over fewer rails like Dual 22+ Amps be better then a PSU with 3x18amp rails?
