This PSU is single-rail. The connector arrangement doesn't matter.Does the cable's used make a difference? I'm not sure how PSU's work exactly and how they divide the amps, but would it be better to use a 6 pin connecter for each graphics card and the 2 molex to 6 pin for each, or 2 6 pins for one and the 2 adapters for the other? Sorry if this sounds silly, I'm a noob when it comes to PSU's, just bought the best brand at the time lol.

You are probably cutting it close. I am a firm believer that you shouldn't cheap out on a power supply.
If you don't OC you'll be ok. If you do OC then no you won't be ok. My system draws about 690W max load.
