Will the corsair 1000HX run 3? What is the next psu that would be a step up?

Depends on the system. And why do you want to run three GTX295s?

PSUs that would be a step up include the Enermax Galaxy EVO 1250W, BFG LS-1200, Coolermaster Real Power Pro 1250W, BFG EX-1200, Ikonik Vulcan 1200W, Silverstone ZM1200M, Inwin Commander 1200W, Thermaltake Toughpower 1200W, and PC Power & Cooling Turbo-cool 1200W.

For folding?, on a i7 @ 3.8? plus wanted your view on what is better than the 1000HX

In that case, you have my answer. I would recommend one of the PSUs I listed above rather than a 1000W unit.

3xGTX295's? I guess you won't need to turn the heat on this winter.
