Which of the torture test of Prime95 do people use?

I am running an winchester 3200+ with 1GB memory, but when i run the torture test blend mode, it allocates ~920MB memory, and then it ends up swapping pages all the time, and the CPU load basically stay around 10% most of the time. Did i do something wrong?

That's the blend mode you're talking about, and frankly it's not particularly good. As you've found, it causes windows to fart about with paging memory around meaning the cpu doesn't work 100%, more like 10%-30%.

If you wanna test the cpu, then do the middle one "In Place large FFTs".

If you wanna test your ram, then do the custom option, and (via trial an error) enter a ram amount that uses up nearly all your ram, but doesn't cause windows to piss about with paging. I have a gig of ram, and almost nothing running in the background, and setting this to 760mb works well (leaves 10-20meg free).
