I'm gonna mod my dfi ultra D to sli really soon and was wondering if I'd be ok using my powerstream 520 in that config? I know its not "sli certified" officially but does anyone have any experience with using it anyways?

Yes, the OCZ PowerStream 520W is my # 1 recommendation. ;)

DFI PSU Guide: http://www.dfi-street.com/forum/showthread.php?t=10854

Anandtech used the OCZ PowerStream 520W for all of their SLI testing
when the 6800GT/U's first came out, the 7800GT/GTX's draw less power than the 6800GT/U's.

I currently have the 520w OCZ Powerstream PSU as well... though I regretted the decision shortly after buying it thinking that the Antec Neopower 480w PSU was superior thanks to its modular design and active PVC. Which would you guys recommend? The Neopower or the Powerstream? So far I'm pleased with my Powerstream though the volts are not dead on like I had hoped! (usally 2-3% variation)

I don't think any PSU you can buy will be 100% accurate. +-5% is within ATX specifications, and 2-3% is very good!

The Powerstream by far.

i would definetly go with the powerstream, I've been running my OCed x2 3800+ rig with a powerstream 600 sli and have been loving it. Very smooothhhh

only beef I have is that it uses 2x 80mm fans as opposed to 1x 120mm fan. So the Powerstream series isn't exactly super silent.
