I've thought about taking an old full tower system I have lying around and turning it into a fileserver with a bunch of IDE drives I have also sitting around. How could I add a second PSU and then hook it up to my mobo/power switch so that it turns on with the rest of the system and therefore power the drives connected to it?

Looks like there are a number of ways to achieve what you are looking to do.

2 ATX psu's

AT & ATX together

Have not tried any of these out. I hope to eventually get around to trying the relayless method towards the end of the article in the 1st link.
 
Yeah.. but that adds a second switch.

What I've done to kick a second PSU with the same power button as the first is to use a Fog Light relay for a car. Go to the junkyard and crawl under the steering column of a VW or Audi. You'll find dozens of good Bosch units. ;)

Anyhoo... take a drive Molex off of the first PSU (can be AT or ATX,) cut the head off. Hook the yellow (12V) and black to the relay activation terminals. That way, when the first PSU is live and there's 12V, it clicks the relay over to the "ON" position. Take the green wire from the second PSU's ATX connector (has to be ATX) and cut it off. Extended it over to the OPEN side of the relay and hook the CLOSED side up to a ground.

Voila! :D

Hey.. and a ballast resistor from an old points ignition system is usally .85 Ohm which can give you a 5A load on the 5V rail making your 12V rail more stable if you use a second power supply exclusively for a pump, lights, fans, etc. Wire them up in parallel for a greater load. :D
