Possible to hack a Tablet display onto an Android PC?

Hey folks, I'm interested in Android CarPC's using something like Odroid or Rasperry Pi.
The thing is, the display size I require is VERY hard to find, especially one with high brightness and easy viewing in direct sunlight.

I know of a few tablets (iPad & Samsung) which meet my needs perfectly.
Is it possible to hack the tablet screen off the tablet and connect it to an Android PC so HDMI video works and you also get the Touch Screen capability?
Do tablets even use an LVDS connector to connect to a driver board?

Yes, I know I could just use a Tablet as my CarPC but I'd rather have a dedicated CarPC build for several reasons.
