Would a high polling rate (say 1000hz) for peripherals break compatibility with linux/unix/mac or cause trouble with windows?
What are the other downsides of having such a high polling rate?

The downsides used to be operating systems and CPUs couldn't handle the higher polling rates and you would get inconsistencies. I don't think that is the case anymore with CPUs and I'm pretty sure Windows 7 and 8 can handle 1000hz polling without any problems. I'm not sure about Linux though.
