Im not real familiar with the Gigabyte boards but the U has 2 more SATA ports and seems to be a little bit more of a higher end board.....the cooling solution on the u also seems a bit better on the north bridge and its most likely a little more over clocker friendly
 
The UD3P board has an onboard RAID controller.\

Also supports ATi Crossfire... it has 2x PCI Express 2.0.

You can tell the Raid controller by looking at the Southbridge. The DS3L vanilla has ICH10, while the UD3P has ICH10R. R Signifying raid.
