Would this setup be good for me (my specs are in my sig). I am new to the watercooling and have a few questions.
1) Should I get the MCR220-QP radiator or the MCR320-QP radiator?
2) Should I get the low, medium, or high fans?
3) Is there anything I should add?
 
Looks good, but with your quad and G80 GTS a MCR320 might be better. Besides, with a MCR320 you get a little bit more headroom if you ever decide to add chipset or mosfet blocks to the loop, plus its only $14 more.
For the fans thats really up to you. Myself, I prefer the medium yates, they have a good balance of decent airflow and low noise.
You should add some PTNuke biocide and also some sinks for your GTS. Maybe an extra set of metal barbs for the rad just in case the rad comes with plastic barbs. Plastic barbs are a PITA.

Personally i perfer the full cover as i dont trust ram sinks.
If one of them ramsinks fall off down goes your card.

The downside of full covers is that when you upgrade you cant take the block to other cards. with a gpu block and sinks with the use of adapter's you can use them on other cards.
 
Also with a full cover there is more of a heat dump from the video cards mem and v-regs. With that extra heat there is a more chance it could increase the CPU's temp. My opinion is that unless if your volt modding your video card a FC block isn't really necessary. I think a MCW-60 paired with the uni-sink would be the best solution for you. This way you don't have to worry about some stupid ram sinks falling off.
