PC data logging controller/software for pressure/temp

I want to hook up a bunch of sensors (pressure and temperature) to a single controller that can be plugged into a PC and displayed on screen. The compatible sensors should be able to withstand air/fuel/oil/coolant in an automotive application, and be threaded/barbed. Anyone have any recommendations? I apologise if this is an inappropriate forum...it seemed most fitting.
