Overheating causing shutdown constantly

Honestly it doesn't sound like you really know what you're doing in there, laptop cooling isn't desktop cooling, doesn't really sound like the guy you took it too really knew what he was doing with it either. You need proper paste on both the CPU and GPU and thermal pads on whatever other components had thermal pads on them and they all need to be properly seated or you get the problems you seem to be getting. Bad thermal pads shouldn't cause 100C CPU temps (I assume you meant 100C earlier), but they could still cause instability and crashes, and just because screws are tight doesn't mean they're properly aligned, if something is slightly off you might have an air gap and be tightening down on a wedge of some sort.

You know what? Because i knew i know nothing in laptop cooling, i went to some supposedly reputed computer repair shop to have them solve the issue, but they screew the job. They changed thermal paste and assume that my overheating was solved.. Went to another shop and say that he "think" that the heatsink might be the problem (after dismounting and checking mostly everything).... Thats why i decided to come here. I surely dont pretend to know much about laptop cooling

The problem we're having is it's really really really hard to troubleshoot this sort of thing via text over the internet, hell voice and video would be difficult. Pretty much every laptop make and model is going to have a different cooler setup, different tricks to get things seated properly, require different numbers and thicknesses of thermal pads. Unless you find someone with not only the same laptop as you but who has also disassembled it and can give detailed instructions on putting it back together the best we can give you is:

Make sure thermal paste is properly applied
Replace thermal pads, they cool off other hot things
Make sure you've got good suction and the fan is blowing air well
Make sure the heatsink is well seated, you might need to apply and reapply paste multiple times and take the heat sink back off to make sure you're getting a good seat every time.
If you have to replace the heat sink try to make sure you get an exact replacement, if it's even a little different be sure to check all possible heat contact locations and make sure the new one covers all the old ones and try to check to make sure there aren't any major height differentials.

If you do all that and still have problems, I dunno.

One more thing b4 i reassemble.
Some hardware monitoring app shows my fan running at 102% all the time, both on normal usage (simple non-flash based web browsing) and heavier task like gaming.

Thing is dont think it runs that fast..Actually i never hear my fan spinning faster or slower depending on the usage, it just always seems to be spinning slow/normal... Still it show 102-103% at ~35000rpm all the time.

Another thing is that speedfan doesnt detect my fan.. It detect everything except my fan

You should be able to notice a difference in sound or at least the volume of air coming out of your laptop if its working correctly. When the laptop heats up, the fan should kick in and move more air. If the fan is running as hard as it says, you should be able to tell it. When I stress my toshiba laptop, I can feel the air get pretty hot coming out the side of it.
It kind of sounds like the PWM lead on your fan might be screwed up and not changing speeds like it should. If you can inspect it, make sure none of the wires are broken/stripped.

Update:
Problem Solved.

Heatsink was the culprit. Replaced it for a new one. Thanks everyone for your advice and please don't undersestimate the heatsink. It can actually go deffect.
