Overclocking Noob

First off, this is what I've got:
Asus P5N32E-SLI mobo
2 gigs of Corsair XMS2 Dominator DDR2 800
EVGA 8800gtx
Silverstone 750watt PSU
Thermaltake Big Typhoon 120mm fan on my cpu
4x 120mm fans in my case

So I'm looking to overclock my processor, but I've never done it myself and I really don't want to screw things up. I also don't want to super push it. I'm hoping I could get some help on how to do this the right way.

Second, I also want my ram in dual channel, but the last time I did that and kept the other mobo settings on auto, it put the ram at the right timings, but gave it too much voltage which caused crashes. Would I be safe just manually putting it at the advertised voltage while in dual channel?

Thanks for the help in advance, and any other speed increases tips would be great.
