Ok today I received my new custom system with dual Gigabyte 7800 GTX's. I'm aware that the gigabyte cards are stock compared to the other pre overclocked cards. How would I go about overclocking these cards from the stock 430Mhz to 460-490Mhz and would this be a relatively easy and safe process?

Buy yourself a cheap card and learn how to use RivaTuner properly. Once you have that down, then I might suggest using it on your new setup. No need to use that kind of cash as a guinea pig.
I dont think you really need to OC those cards anyway. They are far above any requirement you could have. Sure it may gain 2-4fps, but that will have 0 impact on you. Going from 115 to 120 is undetectable.

Regarding your question
First, Welcome to hard forum and second, download a utiliy called NVhardpage The link is at the bottom of this post
execute it. This handy program allows alot of tweaks but dont do any until you are comfortable with what your doing.
Open the program and click on activate cool bits. Coolbits is normally hiddien in the nvidia control panel driver applett and will now be visiable to you.
close nv hard and right click on your desktop and go to settings
click on advanced and select the 7800gtx tab. click on clock frequency section.
take your time and get familiar with the options.
select detect optimum settings. After auto detect ,manualy select a frequency for both memory and core that is substantial below but above stock , say 450 /1200 for now and test
do this in small increments untill you reach your sweet spot.
Bare in mind that the gtx is an unusual animal in that you dont really get much bennifit over 450 on the core untill you break 500.
Finally, like the man said, with SLI you really dont need to risk damage to your cards. That solution you have is more powerfull than you may be aware when you consider that at stock speed you will be able to turn on every conceiveable eye candy at the hightest resolution your monitor can bare and on just about any game if not all in existance.
