I have an Intel 7600k on an Asus Strix Z270i GAMING and THIS ram.
The last time I overclocked was my old 2500k, which was pretty much set it and forget it, and a solid OC was attainable with essentially no effort. I have not kept up with the meaning of all the settings in the Z270 chipset bios for OCing the newer chips. Anyone have a good OCing guide they can point my way? I've got it up to 4.6 by just adjusting the ratio in the ASUS software. Not sure where that lands in the world of OCing them.

same principles from your old 2500K apply for the 7600K.. set a desired voltage and set a desired clock and forget.. you should only have to take care when using adaptive or offset voltage options.. but the rest should be exactly the same, i've overclocked sandy bridge, ivy bridge, haswell, skylake and coffee lake and all are essentially the same way of overclock...
