Other IT shop's, how do you operate?

We are experiencing a large growth spurt, I'm curious how other IT shops do their day to day operations? Currently we have for people. Two are system admin level, one is almost system admin level and the last is a 3/4 time intern.

We use Autotask, we process tickets via a support email address. I'm looking at workflow and project management, when did you look at getting a dedicated sales person or a dedicated project/office manager, stuff like that. I'm really curious how other companies have evolved.

I hope thats not too vague...
 
When you say IT shop, you mean you sell IT services?

If so, when I did that back in the day, it was time to add someone when you can't get all of the jobs done without adding one. Adding people before that just costs you money.

Secondly, what are you growing in to? What type of services are you seeing the largest growth in? if you are doing a bunch of network design and virtualization consulting then it wouldn't make sense to hire a helpdesk person....
 
Yes, we sell IT services and products.

We are taking on more clients, thats what I meant by growth.
