I have a intel d865perll mobo and it has a glowing red optical sound out on the back. It also has a 5.1 channel regular output plugs. My question is, would the sound quality change if i switch from regular cables to optical cable? My speaker system is logitech z-680 and it has a optical in plug.

Probably not noticeably. If you had higher-end components then you might notice a difference, but probably not with consumer-level stuff. Also, you won't get 5.1 channel sound through the digital out. Though you should certainly feel free to try the digital cable yourself and decide which you like more.

you will only get 5.1 from dvds via optical. Any other source - games, etc will only pass stereo on optical cables. You are better off keeping it with the analog cables you have now.
This assumes your speakers have a DD decoder for the optical cable.
