I'd like to have some recommendations on a build I put together for myself. I'd like to comfortably game at 1080. I haven't built a rig or even gamed in years but, this will be used for gamining / watching movies. Its been so long since I've done one of these, so I'm a little out of touch. The only thing I can't decide is the tpe of monitor I want. I definitely want something in the 24-27" range. Back then I just picked whatever had good ratings but now I'm reading about TN and IPS monitors. I'll just have to keep reading on those I guess. I'd like to get your opinions on the build below and if there is anything you would add/subtract/replace, feel free to do so. Thanks! Oh yea, I don't have a specific budget.

After looking around, I realized there were 8gb GPUs and I have a 6gb GPU in my list. It seems both can be found at the same price for the most part, so I might as well go with the 8gb. Are there any 8gb cards you all recommend to go with the components listed above?
 
Most of your parts look pretty good to me. GPU speed isn't necessarily directly tied to the amount of memory, but all else being equal you would of course like to have the larger amount. The GTX 1060 tops out at 6 GB, whereas AMD's RX480 comes with up to 8 GB. Despite the memory difference, these cards tend to trade blows in terms of performance and which card is faster in this game or that. Moving above those cards to something like the GTX 1070 puts you in a whole other world of performance.

I should note, both the 1060 6GB and the RX 480 8GB are *more* than enough for gaming at 1080p, and even most games at 1440p can be handled by these cards today. Cards above that (1070, 1080) have more headroom and will be a bit more future proof, but at 1080p they don't really offer much of an advantage over the card you've already got picked out.

I *have* seen the RX480 8GB on sale for significantly less than $245 - under $200 even, whereas the 1060 6GB seems to hold closer to its $250 MSRP. Get whatever deal you can get!
 
I've made a decision on a monitor (Dell S2417DG). Will that make any difference in determining which route I take in terms of GPU choice? Or will either of the above mentioned work out fine

That monitor is G-Sync compatible, which is exclusive to Nvidia branded cards. If that's the monitor you get, you will definitely want an Nvidia based card.

That said, the monitor is a 165Hz monitor and 1440p for its resolution. 1440p is significantly more demanding on the GPU than 1080p, and a 165 Hz refresh rate is a significantly higher framerate cap than 60hz. In other words, this monitor has the capacity to appreciate a faster GPU; it would make a lovely partner to something like a 1070.

I don't know what your expectations are, and I suspect a 1060 6GB card like you have would make for a pretty pleasant experience. I think a 1070 would make for an *excellent* experience.
