Odd request to help woeful parents

Since moving out I kinda feel bad for my parents in that they love Skype/internet but being that they are illiterate (not completely but enough to really struggle) I thought it would be good for me to set them up with SOME way they could just do a speech to text. Problem with this is that it needs to be COMPLETELY simple. I bought them a first gen Mac Mini for $150 and they love it because its easy and its what they understand (the dock literally just has Skype, Finder and Firefox).

Now I'm somewhat kicking myself for getting them the Mac because I had a simple Linux EEE PC for them before so getting something like Dragon Dictation would have been possible but now I just dont know any solutions. The issue is that this Mac Mini still has the PowerPC architecture so I know MacSpeech is incompatible. Does anyone have any thoughts on the situation?
