I have what I would have thought was a pretty good chip. During my initial OC rounds and limit testing, I was able to boot at 5ghz (not stable) just by upping the vcore some. I didn't know enough about the other voltage options so I thought I would drop down to stable than do some research on what my other power options were before going forward.

I settled at 4.6 with 1.29 vcore. I did a little research, but probably not enough, and started to bump it. I got to 4.8 fairly stable and did a prime95 when I went to sleep. I hovered for the first half hour and temps peaked at 75c but hovered in the low 70s and high 60s so I was comfortable walking away.

Woke up to a frozen box (monitors in power save). Now my stable 4.6 isn't stable anymore. I had to drop back to 4.4 @1.17....

Moral of the story, I should have been happy with 4.6 :)
To get to 4.8 my vcore was at 1.39. So higher than most, but the temps were ok, and from what I read vcore is irrelevent as long as the temps stay below 80c.

Plus side now is my vcore to get 4.4 is low enough my cpu barely hits 50c at full load. I'm just hoping I didn't cause any real damage, so I'm probably just going to be happy with the 4.4 for a bit.

It might be because you are now using a newer version Prime95?
In the past, where you had a "stable" Prime95 it probably didn't have AVX2 instructions?

4.6Ghz is damn good. Pushing it too high might damage the chip and may make even mild overclocks unstable. Anything above 4.4Ghz is just gravy, IMO.

You either did very little reading, or ignored what you didn't want to hear.

a little bit of both.

The actual numbers I found were all over the place and were just comfort numbers that people advised, but on admitted speculation. 1.3 to 1.5 was where most fell into. More said it's pretty irrelevant as long as temps stay good under full load as you're more likely to hit the thermal limit long before the clock limit.

Staying below 80C is a reasonable target. That doesn't allow you free roam with voltage though. Running Haswell or IB cpu at 1.5 volts would be very concerning to me and I wouldn't at all be surprised if it started to suffer degradation within a year or two of running at that voltage regardless of temperature..

There's no way you degraded your chip with 1 night of running a fairly average voltage. I booted a 3770K at 1.7V on water when I was chasing 5.2Ghz. Surprised that didn't insta-fry it.
