O/C'd Q6600 actually performs slower?! What am I doing wrong?

This is weird as hell.
I'm obviously not setting up something correctly and I'm assuming it's causing a nasty bottleneck somewhere.
First, here's my CPU, and here's my BIOS, and a little back story:
I've always O/C'd my CPU to 2.7 and it's always run stable enough. Bought GTA IV the other day and it was crashing after an hour or two. Watching my proc manager showed GTA IV makes great use of multi cores, so I stopped O/Cing the CPU to make sure it wasn't over heating. Low and behold GTA's fine now, and it's CLEARLY running better. To put this to the test I ran some benchmarks using Far Cry 2 and GTA IV and it freak'n IS running better! WTF is going on?
I haven't overclocked anything since the ol' Celeron 300 so I'm well out of it.
Most of my bios settings don't mean dick to me, and Googling them doesn't really help clarify anything either.
I'm running stock air cooling so can't really push it.
I was hoping someone who knows more (so that's like, everyone) or has experience with my CPU could give me a few tips?
By overclocking my CPU and leaving everything to AUTO in my bios, was I hindering some other aspect of the hardware maybe?
God knows. All I do know is that I appear to have been hindering my PCs performance rather than helping for the last few years, which is stupid to say the least.

I'm new to overclocking, but the first mistake I made was my ram was frequency was set to high. Make sure you don't leave all the voltages to auto, manual set them. I don't know much about the Q6600, but a lot of users here use that chip and they should be able to help better. I would also recommend replacing the stock heatsink, that quad core will heat up fast when overclocked.
 
Well, you said it in your post, it became unstable and crashed! When a system is unstable it can run like crap, and yes, be slower. By your statement of "stable enough" I am guessing you never did any kind of real stress testing such as Prime or IBT, which is the first thing you should do. You also need to take everything off of auto, you have no idea what the system is setting anything at and could be applying way to much voltage or to little. And you should also drop down your RAM speed to 1:1 ratio (lowest setting).
 
This reminds me of a video that TomsHardware did a few years ago that showed off Intels CPU overheating projection. They had the cpu running normally playing a game showing the fps, then they turned off the fan, the fps went down as the cpu slowed down instead of overheating, they then took off the heatsink and the game crashed, but CPU was saved. So similar technologies could be in place and decreasing your performance because of a bad overclock.

When it comes to overclocking don't half ass it, do it properly and it will save you headaches.
 
Its best to gradually bump up the overclock as you test and verify, since every chip is different, but you can look at other peoples overclocks to get an idea of what a chip is capable of. Taking someones settings and trying to use them is what I'd refer to as half ass it. If your lucky enough to get it to work, you will still need to test and verify it, plus there could be more potential left in your setup. There is a C2D overclocking database in the intel section you can look at, however it probably won't be too helpful since your using stock cooling.
 
Looking at the C2D dB it's clearly the stock intel HS at fault - it's shite isn't it.

I know asking for other peoples settings is a bit half arsed, I just wanted examples, like the C2D dB provides.

I am running a slight overclock on my Q6600, 3.0ghz using an Arctic Cooling Freezer 7 Pro. Works great and isn't too expensive.
