noobish speed fan Q6600 question

Thanks for looking, and thanks in advance for any guidance o this subject.
My question is simple and one that has been bothering me for a bit.

I use speed fan as my temp monitoring program of choice. I am running vista64 with a Asus P5KE logic board. I have a Q6600 under a Scythe ninja2 HSF.

My question is this:
Speed fan reports the Core temps and they are all nice and dandy in around the 35-45c range from idle to load. Speed fan also reports "CPU" temp. This temp is in the low 50c to low 60c range. What is this temperature and where is it derived from? meaning is this a socket thermal probe? and the core temps are "on-die"? Anyways just want some clarification.

Follow-up to this question, What temp should I believe? I have physically touched the HSF and it is quite literally cool to the touch. As a comparison: its not as hot as my laptop in the area of the laptop HSF.
