I'm running the following system for gaming and streaming but as its rather old i'm looking to updated, any suggestions ?

I was thinking the i7 5930k or i7 6700k

2700k 4.4ghz overclocked
 
are you planning on heavy Overclocking?... if yes then i7 5930K. if not then i7 6700K. the 5930K will offer way better multi-threading performance but also will offer lower gaming performance if you don't overclock it to 4.2ghz+ than the 6700K.
 
Then the 5930K have your name on it.. be sure to pick a very good cooling kit. those chips are power hog
