Is there a good way to check an SSD before using it to make sure it's not defective? With traditional HDD I've always taken a few days to test the drive before putting it to use. I start with the SMART self tests, then do a simple surface scan, then use a program like badblocks to write a pattern to each sector and read it to make sure it's functioning properly before I put it in use.

That's the one downside of SSDs. With SSD failure there is no gradual decline like in spinning hard drives. With SSDs they are usually random complete failure with no chance of recovery.

You certainly wouldn't want to write zeros to an SSD for a few days like you might do with a hard drive; that would just wear out the NAND prematurely to no good purpose. Just use the drive normally and back it up frequently.

Exactly. There is no good way to predict when the controller will fail or hit a firmware bug that will disable the drive.
