I just bought myself a sweet setup that includes the conroe extreme x6800. My system will also have the 1GB 7950X2, 2GB cas 4 latency crucial DDR2 800, 700W OCZ PSU, and the ASUS SLI edition motherboard.

I'm gonna definitely want to overclock this thing so I made sure I got one of those Thermalmake full towers for plenty of air flow, and a zahman fan for the processor..

I know that Intel configured this processor with a multiplier unlock, so is that the way to go? Would it be best to up the overclock on the multiplier instead of changing the FSB? And how much would you all predict that I could overclock this processor (x's on the multiplier, inc in voltage, etc) and keep it stable WITHOUT watercooling? Thanks in advance!

Well, changing the multiplier will get you a faster CPU speed, but it won't mean anything because your bottlenecked at the FSB. Best bet is to increase the FSB as high as it can go (lowering the multiplier if you need to), then overclock the CPU. You'll see a much bigger performance boost doing that then simply boosting the CPU alone.
