Everything and anything.
Mainly used for as max settings as I can achieve game play and as a high res movie player for the family.

I see no reason why you are setting on the X99-E WS mobo. This is workstation mobo, especially for those who have a need for its 7 PCIe slots (I know, I am running it:). Buying this
mobo one pays dearly for the 7 PCIe slots driven by 2 PLX chips which you will never take advanttag of. Why not then skip on this and buy wifi-ready mobo (Gigabyte-X99-Gaming G1 WIFI, Asus X99-DELUXE)? Gigabyte has even replaceable opamp so perhaps one can even skip on the audio card.

After reading on a few around that area, I like the sound of the MSI X99S Gaming 9 ACK Motherboard (estimated to come out on 6/1/15 for $599.00 at pccasegear)

This eliminates the needs for the wireless card and the sound card as well.

games I'll be playing will range from the Shadows of Mordor, Dota2, Crysis, Dragon Age 3 and many more upcoming games as they are released.


The retailers will vary depending on the cost of each individual components. However, I have found that pccasegear has the cheapest available stock in most cases.

as a general question;
Cooling - would the CPU liquid cooler I have opted for be enough (along with the Case fans provided) to efficiently cool most of the components inside, or is it recommended to get better cooling systems all round?
 
The need for WC is also questionable in your case. Buy best air-cooler Noctua NH-DH15 and save yourself potential complications. WC is useful only in the case of testing extreme and then only if you buy cream of the crop. I know, waiting for the Swiftech H240-X WC :).

That's generally not the best method of building a PC unless you're 100% up-to-date on PC hardware and pricing. Just save your money and buy everything in one go. The main exception to this advice is if you know with 100% certainty that a certain part is a good deal and that there won't be any counterparts.
 
On a second thought your planned hardware is not optimal from the intended usage point of view (HTPC, gaming). You do not need 6-core processor for this and X99 mobo. Start from graphics: 2xGTX980 SLI would be fantastic highest-end setup. Then match standard 4-core processor and mobo to it. In such configuration you get the best system for your use for the same price and you will have open path for 4K projector in the future.
