Yes, have Windows 7 64 Bit.

What I'm looking for:
- Definitely 2500K CPU (2600k if budget allows)
- Good cooling system
- 8GB RAM min (16GB if budget allows)
- Good looking case ( I like Silverstone FT02B, Corsair 650D/800D, but they're very expensive)
- Modular PSU (Once again, if budget allows. Love Seasonic/Corsair products)

No mouse and keyboard for you without getting cheaper parts or raising your budget. You can probably get an XFX semi-modular PSU (which are usually Seasonic built) for not too much more. Getting one of the cases you mentioned is really going to require raising your budget.

A good mouse is a Logitech G500. Keyboards are far more personal. I like Logitech G series keyboards, others like Razers. Go to a store and try them out if you have something nearby.

Don't go cheap with PSU. If you can go with more pricey but reliable for future upgrade.

I can't really recommend any mouse/keyboard combinations. Usually it's recommended to physically go to a store and try them out first-hand.
With the Mouse+Keyboard and the Cooling, you'll have about $100 ~ $200 left over for the case.

While you're waiting on the case and the aftermarket CPU HSF, I would like to remind you that there are two different revisions of the Asus P8P67 and the P8P67 PRO with the B3 stepping chipset: versions 3.0 and 3.1. The difference between the two is the onboard USB 3.0 controllers (Renesas on the 3.0, ASMedia on the 3.1). Check the white sticker on the front edge of the box. If it says 3.1, do not download or install the NEC/Renesas USB 3.0 driver.

Not at seriously overclocked speeds, at least. Unlike previous K-series CPUs, the i7-2600K and i5-2500K come with an HSF. However, such stock HSFs are good only at stock speed or with a slight overclock.
