I am hoping to build something that I won't have to upgrade for at least 3 years. My res is low and I honestly have no urge to increase it. The only games I will be playing are cross platform (pc and xbox 360) so nothing really demanding. I want to build it and not worry about having to upgrade for at least 3 years.
 
You do know AMD is releasing the new HD 7000 series video cards next month. If you absolutely can not wait that long, then we'll get you a build together, but if you can wait that long let us know, then come back and bump this topic after those cards come out.

Total: ~$985 and there are some rebates I believe. Since you have low resolution graphics, I don't think you need to wait too long for the 7970, prices may drop for the lower end cards, but no one knows how much or really if they will since the 7970 will be so expensive anyway. So I priced out an AMD 6950 which should handle anything you need for awhile, and it also has 2GB of VRAM just in case you upgrade your display and resolution. The 2500k will give you room to OC, the Z68 board will allow the onboard graphics through the CPU. The MB and CPU combo will allow for easy OCing if you choose to do so in the future. And a 1TB HDD, which should hold you over for awhile.

For your needs, it'd be fine building a PC now. The AMD 7xxx series is going to be expensive and probably hard to get during initial release.

This leaves you about $120 from your original budget for a case and shipping. Case-wise, it really depends on your own preference, but Lian-Li, Corsair, and Antec are all good brands to look into. Some things you'll want to watch for are number of bays, ease of installation for HDDs, front ports, number/arrangement of fans, etc.
 
Ok No-Other beat me to the punch with pretty much the same build, but he forgot windows 7 =P.

So just down that 6950 to a 6870 and you're all set.
