I was thinking of getting the HP PSC2510 network multi function printer. It has CAT5, USB, and WiFi capability. My question is if I use the cat 5, can I plug it directly into one of the ports on my router, or will it need its own NIC card in my PC?

Plug it straight into a LAN port on the router/switch. The software with the printer will guide you through network setup.

I'm not too familiar with that model specifically.

However, that RJ45 connection should be the integrated JetDirect print server. You should be able to hook it up to either a standalone switch, or a switch port on a router.

-------------

Just looked up the manual on that model on HP's site. Here's a link (warning, 8.3 megs) Check out chapter 14, where it discusses all about wired networking setup.
