Current System:

PSU: Enermax 600W
Motherboard: Intel D975XBX
CPU: Core 2 Duo 6700 overclocked
Memory: 2 GB Corsair XMS2 DDR2-800
GPU: X1950 in Crossfire and overclocked
Sound Card: X-Fi Platinum
Hard Drive One: 150GB Raptor
Hard Drive Two: 320 GB WD 3200
Optical Drive One: 16x Lite-On DVD and CD Burner
Optical Drive Two: 16x DVD Reader/CD Burner
Monitor: Dell 24" Widescreen operating at 1900x1200

I play mainly flight sims like BoB II: WoV, and IL-2. On the horizon is Storm of War which should be jaw-dropping awesome.

So, I have been a little hampered by running either of these games at higher settings. What do you think I should upgrade first, or do I need to upgrade at all?

I would start with a new video card - the rest of your rig looks pretty good. A 4870 would be a great upgrade, so would a 4870X2.
 
Video cards, I have the same setup. I just ordered 2 4850's it is going to rape compared to my xfire 1950's.
 
That was my thought, as well. I think I will wait to see where the price of 4870x2 falls in relation to the 4870. However, I am sliightly concerned about the power requirements of the 4870x2 which could make a better PSU necessary.
 
All I would do would be to look at a video card update. The rest of the stystem is solid. Right now the ATI 4850 and 4870 are the best deals. The 4850 at $200 would be a great upgrade for you without breaking the bank. The $300 4870 would put you in line to play everything for a while. And the top of the line, not quite yet out, 4870x2 would just be nutso.
 
The 4870x2 may be worth the wait as it may drive down prices even further, whether or not I actually get the 4870x2 or not.
 
Got off the phone with VM yesterday, and here is what they are going to do:

My cooling system leaked all over the case so they are replacing the mobo, and upgrading the cooling system to their latest offering. GPU will go from X1950 Crossfire to HD4870 at no cost. I am upgrading the PSU to a 1200w unit in order to go Crossfire late if I so desire.

Grand total: $175

Not too bad! VM really took care of me.
 
You need a better graphics card and that's it. Grab a 4870 or GTX260 and be done (I prefer Nvidia though).

And you don't need 1200Watts to go crossfire. If you don't have a bunch of crap running on your system, you can run 2 graphics cards under 500 watts. It's been tested. http://mark.zoomcities.com/images/gfx/GFXpowerchartby3d.png

I have 8800GTS 512 SLI. With my E3110 and 4GB of ram, I really only need a 450 watt PSU for SLI. I don't have any stupid lights or a bunch of fans or coffee cup warmers hooked up to my system.
 
As I stated previously, I am getting a 4870 free of charge from VM. As for the 1200w being overkill, of course it is. However, I wasn't so sure my 600w PSU would be enough. I have ton of peripherals attached to the computer, so better safe than sorry. I'm pretty sure it's a quality unit; VM doesn't usually use subpar stuff.
