Need some directional advice

I am looking to consolidate my rack space more, and have a lot more flexibility.

Current setup is a WHS 2011 box w/8 1TB black drives in a Full Tower case, sitting in the bottom of my rack

I HATE not having Drive Extender

I recently got my Dell 1950 PE running ESX 5, and am "desiloing" my ClearOS/PBX/SBS servers into that box, and it got me thinking why not do the same with the WHS if at all possible.

WHS functions for me today:
OSX backup (albiet a shitty one)
Windows automated backups
Media Storage
-Movie/Music collection
-Photography business storage (the MOST important function) uses a rsync like cloud backup, if I could use Rsync I could save some decent $$
TS3 server host (Could move to ClearOS today if needed, not important)

What I would like to do:
Have a single place for all of my storage for:
VMs
Media
Photo stuff (redundancy redundancy redundancy!)
Have the ability to add new drives (possibly not the same/same size?) to expand my volumes(s)
Seperate Volume/partition for my wifes iMac/OSX VM time machine.

I am thinking about getting a SAS HBA and a SE3016, attaching it to the 1950PE

I also have a 2U Chassis w/12bay plane that I could just transfer the WHS to, today for nothing, but doesnt really solve my need for more VM space or my hatred of WHS 2011

Can I control the SE3016 from a VM? if so, what OS/File System can I use?

Hope this is enough info for a few suggestions on where to start.
