Need recommendations on a NAS

I am a bit overwhelmed looking at my options so I thought I would list my wants and needs and ask for help. I always start out looking at 4 bay NASes like QNAPs and others thinking they are a bit over priced and wondering maybe if I can build my own and end up with a 20bay system, (10 years ago I would be all over that though, but the woman keeps me in check now)

I was thinking 4 bays because I do want some redundancy if a drive fails and I want more storage than I can just get with one drive. From my understanding with 4 I can use 3 drives of space and the other drive for the redundancy (not the best worded but you get what I mean I hope).

I will probably buy it from NCIX if that helps to point me towards one.

My usage is backup shares (manual copying for PC, timemachine space for a mac?) and a media storage to a boxee (which will be over smb probably, it seems to work better than DLNA for me right now)

What drives should I use, I wanted to use 3tb drives if possible, but they are expensive, is it possible to just get 2 drives and increase it to 4 down the road without having to lose everything?

Nice to haves but not required:
Lower power the better, (trying not to run my pc 24 / 7)
Runs Linux (or something similar), I am a developer and I would somewhere to put some stuff (like running a subversion server or somewhere to push git repositories)

So what should I get?
 
I guess it depends on whether you're looking for something you can just plug drives into, and forget about, like a drobo, or something with a lot more configuration options, like a windows home server.
