I recieved this PSU yesterday, yet have not installed it. I was reading some of the paper work that came with it, and found out that you can "Fine Tune the Voltage Potentiometers" by turning some screws. This system will be overclocked (not by much though) Do I need to adjust these things, or JUST LEAVE THEM ALONE? I hate that there is another thing to adjust.

No, leave them alone. The only way to accurately adjust them is with a multimeter. You touch the multimeter to the drive connectors while the computer is on, and get a voltage reading that way. Dont trust the bios readouts, they are always off. If the bios does say voltages are really low, then get a multimeter and check and adjust them.

You can fry the computer if you adjust the voltage too high without checking.

I'll second the multimeter. 2 rigs in a row on an Antec True 550 read way low on all rails, but a multimeter check showed them to be quite close. Don't trust the bios, MBM, or a utility that came with your board. Onboard mobo voltage sensors are almost never spot on.
