So I used to lurk on these forums a long time ago, but just made an account because I have been out of the hardware circles for too long and don't know if my old biases are interfering with me. I have been an ASUS fanboy and Intel supporter for a long time, have not used an AMD since socket A days and I bought a ton of stuff from ASUS 5 years ago and they were all awesome products. I am open to an AMD system on a MSI board, or whatever, but I might need some convincing.

With Tax money coming back I thought now was the best time to get a new build and get my settings back into the 'Ultra' section. I saw the template of questions below and feel free to ask me anything else. Thanks for taking the time to help me out!

1) What will you be doing with this PC? Gaming? Photoshop? Web browsing? etc
Gaming, VR, Media Server, multi-monitor entertainment

2) What's your budget? Are tax and shipping included?
$1400 before taxes and shipping (doubt it will be near this much because I don't need a Video Card)

3) Which country do you live in? If the U.S, please tell us the state and city if possible.
U.S.
Lawrenceville, GA

4) What exact parts do you need for that budget? CPU, RAM, case, etc. The word "Everything" is not a valid answer. Please list out all the parts you'll need.
CPU, Mobo, and RAM

5) If reusing any parts, what parts will you be reusing? Please be especially specific about the power supply. List make and model.
Case:RavenRV02
PSU: Corsair RM850i
Video Card: EVGA Nvidia GTX 1080 - FTW Edition
SSD: Samsung 850 - 500GB

6) Will you be overclocking?
Nope

7) What is the max resolution of your monitor? What size is it?
1 3840x2160 monitor - 27" - LG 27UD68 (I am ok running @2k 2560x1440 for some games)
1 1920x1080 monitor - 22"
2 1920x1080 TV - 32" and 65"

8) When do you plan on building/buying the PC?
Sometime in March, sooner the better

9) What features do you need in a motherboard? RAID? Crossfire or SLI support? eSATA? Onboard video (as a backup or main GPU)? etc.
At least 6 SATA ports, prefer more. I have lots of HDD I use to store various media (cartoons, movies, etc)

10) Do you already have a legit and reusable/transferable OS key/license? If so, what OS? Is it 32bit or 64bit?
Yes, Win10 Enterprise x64

I tried to link a PCHound link but I think because I'm so new I don't have that permission, but here is what I was thinking:

i7 8700k
ASUS ROG Maximus X Hero
Corsair 16GB (2x8GB)

I would mostly like to hear about which MoBo people like and why it might be good for me.

Thanks again for any feedback!
