Need Help deciding ZFS implementation

My requirements for this build, first to last

Security of data(ZFSR2)
SMB for XBMC and inter network transfers
AFP for TimeMachine

Current hw setup:

R5wData in W7U
Boot vertex2
3.2 dual core intel
4gb 1066 ram
R5=8xWD20EADS

future ZFS server(from spare parts)
SUPERMICRO MBD-X7SBL-LN2
Intel E4600
Intel SASUC8I
Corsair 8GB RAM
8xWD20EADS TLER on WDIDLE off

My end result is to have all my disks in one case (Antec 1200) so steps would be

Create ZFSR2(Rinzler)
Rinzler <= copy data from R5 (between two boxes)
reformat R5 as ZFSR2wCache(Cora)
Cora <= copy data from Rinzler (within the same box)
add cache to Rinzler

Is this doable? and how?
 
It's hard to comment when you are using all these acronyms and such with no indication what they mean. Rinzler? Cora?
 
R5 - raid5 of 8x wd20eads currently with about 8TB of data
ZFSR2(Rinzler) - zfsr2 of 2TB disks named Rinzler made from empty spare disks
ZFSR2(Cora) - zfsr2 of 2TB disks with vertex2 60gb cache named Cora made from original raid5
