Does anyone know of a case with 8 internal HD slots and proper cooling ability? (Looking to setup a mean raid5 array)
 
with enough mounting brackets the Staker cases would work out for what you need/want, lists out at 11 external 5.25 bays. Linky.
 
Just about ever case can accomodate 8 drives.
