Need advice on upgrading to Eyefinity/surround.

I'm preparing to enter the surround gaming club and need advice on what to buy.

I have a budget of around $1000 for just the monitors and I want the best quality I can get for that or (preferably) 600-800 (or even less if I can get away with it). Video card is a bit tricky since I have a GTX 480 and I really don't want to run 2x 480 due to cost (more operating cost rather than initial cost) so I will run a spare Radeon 6870 for the initial testing and decide what I want to run later on (probably 2x GTX 460 or something).
The resolution MUST be 1920x1080 or 1680x1050 for each screen. I do not desire to run at higher resolutions. 1680x1050 might be better due to video card issues noted above and a desire to keep costs down if at all possible. This setup will be used primarily for gaming (flight sims and racing sims especially) and some web browsing/video -- nothing else. I am not picky about color accuracy but I can't stand ghosting or input lag.

Also need advice on cheap desk mountable arms (no idea what they're called but I've seen them in pictures) so I can free up desk space. Example (but too expensive):

edit3: Just found out that my primary game of choice (IL2-1946) is apparently not supported by Surround (no info about it working anywhere on the net, not one single video of it in action), so I guess ATI is my only choice as I am already committed to multi-displays now. edit4: really concerned about both (ATI/NV) solutions. The more I read, the less impressed I am. I was under the impression triple monitor gaming was finally a viable option but major issues obviously still exist. I already answered (and deleted from this post) most of my questions this morning, and I'll continue to research this week and decide, but I'm leaning more and more towards keeping my single 1080p sig display.
