Alright, so there's a 10C difference between Core Temp and Real Temp on my E7200. Real Temp is 10C lower. What to believe? Thanks!

I haven't ever used realtemp. I use coretemp, it is very accurate as far as I know. Try everest and see which that agrees with.
 
Look at one of the most recent heatsink reviews here on [H].
They have a list of software temperature recordings versus a thermistor directly embedded on the cpu cover.
Gives a nice idea about actual temps and various software we use.
 
One thing to consider with RealTemp is that it may need to be calibrated to your processor.
